
A delicious Thai stir-fried noodle dish with vegetables and peanuts.
Ingredients
- 8 cup Rice noodles
- ½ cup Peanut sauce
- 1 cup carrots
- 1 cup broccoli
- ½ cup tofu
- 1 cup Bean sprouts
- ½ cup Green onions
- 2 teaspoon Garlic
- 1 cup Lime
- ¼ cup Crushed peanuts
- 2 tablespoon soy sauce
- 1 tablespoon Sesame oil

Cook rice noodles according to package instructions and drain.

Heat sesame oil in a pan over medium heat.

Add garlic and cook until fragrant.

Add tofu and cook until golden brown.

Stir in carrots, broccoli, and bean sprouts, and cook for 2-3 minutes.

Push vegetables to one side of the pan and add beaten eggs to scramble.

Combine everything and add the cooked noodles.

Pour peanut sauce and soy sauce over the noodles and stir to coat evenly.

Remove from heat and add lime juice, green onions, and crushed peanuts.
