Spicy Thai Curry

A flavorful and aromatic curry with vegetables and tofu in coconut milk.

Ingredients

  • 2 cup coconut milk
  • 2 tablespoon red curry paste
  • 2 cup tofu
  • 1 cup bell peppers
  • 1 cup bamboo shoots
  • 1 cup carrots
  • 2 cup broccoli
  • 2 cup jasmine rice

Directions

    Cook jasmine rice according to package instructions.

    Press and cube tofu, then pan-fry until golden.

    In a large pot, heat coconut milk and stir in curry paste.

    Add vegetables and simmer until tender-crisp.

    Add tofu, soy sauce, and brown sugar.

    Finish with lime juice and fresh basil.

Great balance of spices! I added a bit more coconut milk to make it creamier.
