
A refreshing salad with quinoa, fresh vegetables, and Mediterranean flavors.
Ingredients
- 1½ cup quinoa
- 1 cup cucumber
- 1 cup cherry tomatoes
- ½ cup red onion
- ½ cup kalamata olives
- ¾ cup feta cheese
- 3 tablespoon olive oil
- 2 tablespoon lemon juice

Cook quinoa according to package instructions, let cool.

Dice cucumber and quarter cherry tomatoes.

Finely slice red onion and chop parsley.

In a large bowl, combine cooled quinoa with all chopped vegetables.
