Mexican Low-Carb Breakfast
A hearty breakfast wrap filled with scrambled eggs, cheese, and fresh vegetables.

Ingredients

  • 4 cup large tortillas
  • 6 cup eggs
  • 1 cup black beans
  • 1 cup cheddar cheese
  • ½ cup salsa
  • 1 cup avocado

Directions

    Warm the tortillas in a large skillet.

    Scramble the eggs with salt and pepper until just set.

    Heat the black beans in a small saucepan.

    Slice the avocado.

    Layer each tortilla with eggs, beans, cheese, avocado, and salsa.

    Roll up tightly, tucking in the sides as you go.

    Optional: Return to skillet and brown on all sides.
